CARROT CAKE WITH CREAM CHEESE
ICING
 
2 c. sugar
4 eggs
1 1/4 c. salad oil
1 tsp. vanilla
2 c. self-rising flour
2 tsp. baking soda
2 tsp. cinnamon
3 c. grated carrots

Blend sugar, eggs, salad oil and vanilla together. Sift all dry ingredients together and add. Stir in grated carrots. Pour in three 8 inch pans, greased and floured. Bake at 350 degrees for 30 to 35 minutes.

ICING:

1 stick butter
1 (8 oz.) cream cheese
1 box powdered sugar
1 tsp. vanilla
1 c. chopped pecans

Mix together and spread on cake.
