CARROT CAKE WITH CREAM CHEESE
ICING
 
3 c. plain flour
2 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. salad oil
2 c. sugar
2 c. grated carrots
1 sm. can crushed pineapple
1/2 c. chopped nuts
2 tsp. vanilla
3 eggs

Sift together flour, soda, cinnamon and salt. Mix together oil and sugar. Add half the dry ingredients; mix well. Beat in carrots, pineapple and nuts. Add vanilla and remaining dry ingredients. Add eggs, one at a time, beating until well blended after each addition. Pour in greased and floured pans. Makes 3 or 4 layers. Bake at 350 degrees 30 minutes or until brown.

CREAM CHEESE ICING:

Blend together:

1/2 stick butter
1 box powdered sugar
1 lg. pkg. cream cheese
1/2 tsp. lemon extract
1 tsp. vanilla
