BEST EVER ONION RINGS 
2 (4 inch) Spanish onions
1 tsp. salt
2 c. pancake mix (do not substitute)
2 c. club soda
Oil for frying

Slice onions 1/8 inch thick. Place in bowl with a cover; sprinkle with salt. Refrigerate, covered 2 to 3 hours. Remove from bowl, separate into rings. Dip each ring in plain flour to act as an adhesive to the batter.

Combine the pancake mix with only enough of the club soda to give a batter the consistency of buttermilk. Dip floured rings in batter. Fry in about 2 inches of oil at 425 degrees or on medium high on top of stove. Fry only until brown on both sides. Drain well on toweling. Sprinkle with salt.
