FRIED ONION RINGS 
2 lg. Spanish onions
3 c. all-purpose flour
1 1/2 tsp. baking powder
2 tsp. salt
1/4 tsp. pepper
3 eggs
1 c. milk
Vegetable oil

Peel onions; cut into 1/4-inch slices. Separate into rings. Combine next 4 ingredients; stir well. Combine eggs and milk in separate bowl; beat well. Dip onion rings into flour mixture, then into egg mixture and back into flour mixture. Fry in deep hot oil (375 degrees) until golden brown. Drain on paper towel. Yield: 6-8 servings.
