SALSA BEEF POTATOES 
4 med. baking potatoes, scrubbed
1 lb. ground beef (or ground turkey)
2 c. salsa
Sour cream
Cheese, shredded
Tomato, chopped
Green onions, chopped
Green pepper, chopped
Salsa

Bake potatoes in microwave or oven. While baking, brown ground beef or turkey until no longer pink. Drain. Stir in 2 cups salsa. Cut potatoes in half lengthwise when through baking; mash slightly with fork. Spoon meat mixture evenly over potato halves. Top each with sour cream, cheese and chopped tomato, green onions and green pepper. Serve with additional salsa.

Since microwave ovens vary in power, you may need to adjust your cooking time.
