APPLE NUT CAKE 
3 c. cake flour
1 tsp. salt
1 tsp. baking soda
1 1/4 c. corn oil
2 c. sugar
2 well beaten eggs
2 tsp. vanilla
3 c. fresh apples, chop in small pieces
1 c. chopped pecans

Sift cake flour, salt, and baking soda together. Blend oil and sugar; add eggs. Beat dry ingredients into oil and sugar mixture, a little at a time. Add vanilla; stir in apples and nuts. Pour into two 9 inch cake pans. Bake in oven - set at 325 degrees for 45 minutes.

ICING:

1 1/2 c. light brown sugar
1 stick butter

Melt in pan and add 3/8 cup evaporated milk. Bring to a boil; remove from heat and let cool until reaches spreading consistency. Add 1 teaspoon vanilla.
