BEE-LICIOUS HONEY NUT APPLE COFFEE CAKE | |
1 c. shortening, melted 1 c. honey 2 eggs, slightly beaten 1 tsp. vanilla extract 2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 1 c. yogurt 2 c. small apple chunks Mix together first 4 ingredients. Alternately add dry ingredients and yogurt to egg mixture until all are combined. Fold in apples and spread batter in 3 greased 8 x 5 x 1 inch pans. Make topping by combining 1/2 cup chopped nuts, 1 teaspoon cinnamon, 1/2 cups brown sugar, 2 tablespoons melted butter. Combine and spread over cakes either before or after baking. Bake for 45 minutes in a 350 degree oven. |
