APPLE NUT POUND CAKE 
3 med. apples
1 1/4 c. cooking oil
2 c. sugar
3 eggs
1 tsp. baking soda
3/4 tsp. cinnamon
1 c. chopped pecans
2 tsp. vanilla
3 c. flour
1 tsp. salt

Combine oil, sugar, and eggs and beat on medium speed for 3 minutes and then add vanilla. Combine dry ingredients and add to above mixture. Fold in apples and pecans and bake in a tube pan at 325 degrees for 1 hour and 20 minutes.

GLAZE:

1/2 c. butter
1 1/2 c. powdered sugar
1/2 tsp. vanilla
Milk

Heat butter over medium heat until dark color. Strain through a strainer lined with a paper towel. Beat in the powdered sugar, vanilla and enough milk to make a spoonable glaze. Makes 3/4 cup.
