APPLE FLOWER BLOSSOM POUND CAKE 
This recipe makes a light and fluffy cake (not to be confused with a pastry, which is flaky instead). You may substitute 1 1/2 cups of whole wheat white flour for all purpose flour, if desired.

1 1/3 cups vegetable oil
2 cups sugar
3 eggs
3 cups unpeeled chopped apples
3 cups all-purpose flour
1 1/2 tsp. baking soda
1 tsp. salt
1/4 tsp. cloves
1/2 tsp. cinnamon
1/2 tsp. ground ginger
1 tsp. vanilla
1 cups raisins dusted in flour
1 cup pecans

Mix together oil and sugar. Add eggs and apples. Combine flour, soda and salt. Add spices. Stir into apple mixture; add nuts, vanilla and raisins. Place in greased and flour tube pan and bake at 325 degrees for 1 hour and 10 minutes or until done.

GLAZE:

1/2 stick butter
1/2 cup brown sugar
3 tbsp. milk
1/2 tsp. vanilla

Cook for 3 minutes.
