APPLE COCONUT POUND CAKE 
1-1/2 c. oil
2 c. sugar
3 eggs
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 (4 oz.) can coconut
1 c. nuts, chopped
3 c. apples, chopped
1 1/2 tsp. vanilla

Mix oil and sugar and add eggs one at a time. Add dry ingredients. Add coconut, nuts, apples and vanilla. Mix well. Pour into greased and floured tube pan.

Bake in a 325°F oven for 80 minutes. Do not open door while baking.

12 servings.

Tip: Make ahead and freeze.

ICING:

1/2 c. nuts, chopped
4 oz. cream cheese, softened
2 c. confectioners' sugar
4 tbsp. butter, melted
1 tsp. vanilla

Mix all ingredients together. Spread on cooled cake.
