COCONUT APPLE CAKE 
1/4 c. coconut
1/2 c. soft butter
1 c. sugar
2 eggs
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
8 apples - sm.
2 tbsp. sugar
1 tsp. cinnamon

Grease a 9 inch spring form pan generously and sprinkle bottom and sides with 1/4 cup coconut. Cream 1/2 cup butter and 1 cup sugar, add eggs. Sift 1 3/4 cups flour, baking powder and salt into mixture and beat well. Pour into pan. Peel and core apples and cut into eights.

Stand sections of apple on end and on top of batter pressing into batter slightly. Start at outside of pan and work in circles. Combine 2 tablespoons sugar and cinnamon and sprinkle over apples. Bake 1 hour.

1/2 tsp. vanilla
1/2 tsp. almond extract
1/2 c. coconut

Combine 1/4 cup butter, 1 cup sugar, two eggs, two tablespoons flour, vanilla and almond extract and blend well. Fold in 1/2 cup coconut. Spoon over hot cake and spread evenly. Bake 30 minutes or until top is browned and set at 375 degrees. Cool in pan.
