TED'S AWESOME MAC-N-CHEESE 
This is a very rich dish... Can be served as a main dish if you prefer, but is OK as a side dish, goes best with chicken, fish, or seafood.

1 to 1 1/2 lb. penne pasta (or any pasta you desire)
8 oz. fresh grated Parmesan cheese
8 oz. fresh grated Asiago cheese
8 oz. grated Fontina cheese
8 oz. grated smoked Gouda cheese
8 oz. grated Gouda cheese
8 oz. Mascarpone cheese
2 cups milk
1/4 whole garlic, chopped
1 tbsp. dried rosemary
1 tbsp. dried thyme
1 tbsp. dried oregano
1 tbsp. dried basil
salt and pepper, as needed
Italian style bread crumbs (Progresso or Panko)

Bring salted water to boil, and boil pasta till it is al denté.

While pasta is boiling grate the cheeses.

Drain and rinse pasta in cold water.

Put pasta back in pot and add your milk, cheese, and seasonings.

Heat up till the cheese is almost completely melted and then pour in a greased 9x13-inch baking dish.

Lightly cover top of mac-n-cheese with bread crumbs.

Bake at 350°F for 30 to 45 minutes, and serve!

Ted - have no doubt - this is wonderful, however if today's economy... to purchase the 6 different cheese's... would cost as much as (what used to be)... a weeks supply of groceries! This would be something for very special occasions. May sneak up on it - and buy one/two cheese's at a time... and have for holidays. PLEASE - submit any & all great recipes you have.
