LUSCIOUS APRICOT BARS | |
2/3 c. dried apricots 1/2 c. butter 1/4 c. sugar 1 c. flour 1/2 c. walnuts 1/2 tsp. baking powder 1/4 tsp. salt 1 c. brown sugar 2 eggs 1/2 tsp. vanilla Rinse apricots and cover with water; simmer 10 minutes. Cool and chop; set aside. Mix butter, sugar and 1 cup flour until crumbly; pack into an 8 inch square pan which has been greased. Bake at 350 degrees for 20 minutes. Mix 1/3 cup flour, baking powder and salt; beat in eggs and brown sugar and add flour mixture. Mix in vanilla, nuts and apricots. Spread over baked layer; return to oven for an additional 20-25 minutes. Cool, cut in squares and sprinkle with powdered sugar. |
