LUSCIOUS APRICOT BARS 
2/3 c. dried apricots
1/2 c. soft butter
1/4 c. granulated sugar
1 1/3 c. sifted flour
1/2 tsp. baking powder
1/4 tsp. salt
1 c. brown sugar, packed
2 eggs, well beaten
1/2 tsp. vanilla extract
1/2 c. chopped nuts
Confectioners' sugar

Rinse apricots; cover with water; boil 10 minutes. Drain, cool and chop. Start heating oven to 350 degrees. Grease 8 x 8 x 2 inch pan. Mix butter, granulated sugar and 1 cup flour until crumbly. Pack into pan. Bake 25 minutes.

Sift rest of flour (1/3 cup), baking powder and salt. Gradually beat brown sugar into eggs, mix in flour mixture, then vanilla, nuts and apricots. Spread over baked layer. Bake 30 minutes or until done. Cool in pan. Cut into 32 bars. Roll in confectioners' sugar.
