LUSCIOUS LEMON BARS 
1 c. flour
1/2 c. butter, softened
1/4 c. powdered sugar
1 c. granulated sugar
2 tsp. grated lemon peel
2 tbsp. lemon juice
1/2 tsp. baking powder
1/4 tsp. salt
2 eggs

1. Heat oven to 350 degrees.

2. Mix thoroughly flour, butter and powdered sugar in small bowl. Press evenly with hands in bottom and 5/8 inch up sides of an ungreased square pan 8x8x2 inches. Bake 20 minutes.

3. Beat remaining ingredients in a medium bowl on medium speed until light and fluffy. Pour over hot crust.

4. Bake just until no indentation remains when touched lightly in center, about 25 minutes. Let stand until cool then cut in 1 1/2 inch squares. Makes 25 squares.
