FISH CHOWDER 
6 tbsp. butter
2 leeks or 4 spring onions, diced
1 stalk celery, diced
3 potatoes, diced
1 tbsp. salt
1 qt. water
1 pt. whipping cream
Shrimp, scallops, crab, crab legs, oysters, clams, etc.

Saute leeks or onions and celery in butter until translucent. Ad potatoes, salt and water and bring to boil. Heat and simmer for 30 minutes. Add fish (whatever seafood one desires). When heated through, add whipping cream. Do not boil. Serve immediately. Serves 6 to 8 people.
