LEMON MUSTARD CHICKEN 
1 broiler fryer, cut up
Juice of 1/2 lemon (approx. 3 tbsp. lemon juice)
Grated rind of 1 lemon
3 tbsp. prepared mustard (not the yellow hot dog kind)
1/2 c. dry bread crumbs
1/2 tsp. salt, optional

Brush chicken with lemon juice, spread with mustard and roll in mixture of crumbs, lemon rind and salt. Spray baking pan with nonstick cooking spray. Bake chicken at 400 degrees for 1/2 hour, turn, bake 1/2 hour longer, or until browned.
