EASY CARROT CAKE 
Cake:

2 c. sugar
2 c. flour
2 tsp. baking soda
4 eggs
2 tsp. cinnamon
1 1/2 c. oil
3 c. grated carrots
1 tsp. salt
1 c. nuts (optional)

Icing:

1 (8 oz.) pkg. cream cheese, softened
1 stick butter
1 box powdered sugar
1 tsp. vanilla

Cake: MIX BY HAND. Mix sugar, flour, baking soda, salt and cinnamon together. Add oil and eggs. Mix well, then stir in carrots and nuts (if desired).

Bake at 350°F in a 9 x 13-inch greased pan for 30 to 35 minutes.

Icing: Combine cream cheese, butter, sugar and vanilla together until mixed well. Spread on cooled cake.
