ENCHILADA CASSEROLE 
1 lb. ground beef
1 sm. onion, chopped
1 tsp. cumin, crushed
1 tsp. chili powder
2 cans enchilada sauce
2 c. shredded sharp cheese
1 sm. can pitted olives
1 doz. tortillas
Salt & pepper to taste

Brown meat, onions and spices in skillet. Add 1 can sauce and simmer about 5 minutes. Slice tortillas in one inch strips. Butter 1 1/2 quart casserole, layer tortillas, meat and cheese. Continue layers until meat is all used, save cheese for top.

Pour sauce over layers; add cheese and olives on top. Bake in 350 degree oven until cheese melts.
