MOLDED CHICKEN SALAD 
2 env. unflavored gelatin
1/2 tsp. salt
1 c. cold water
1 tsp. minced onion
2 tbsp. lemon juice
1 c. mayonnaise or salad dressing
1 c. diced celery
2 tbsp. diced pimento
1 (10 3/4 oz.) can cream of celery soup undiluted
2 c. diced cooked chicken or turkey

Soften gelatin in water in large saucepan; cook over medium heat, stirring constantly until dissolved (about 3 minutes). Add soup, salt, lemon juice, onion and salad dressing, stirring well. Chill mixture until slightly thickened; then stir in pimento, celery and chicken. Spoon into a 6 cup mold and chill until firm. If you prefer mold this in individual molds.
