ZUCCHINI BREAD 
2 c. Bisquick
1 1/2 to 2 c. shredded zucchini
1/4 c. vegetable oil
2 tsp. cinnamon
1/2 c. chopped nuts
1/2 to 3/4 c. sugar
3 eggs
1 tsp. vanilla
1 tsp. nutmeg

Heat oven to 350 degrees. Grease bottom of loaf pan. Beat all ingredients on low speed, scraping bowl constantly, 30 seconds. Beat on medium speed, scrape bowl occasionally, 1 minute.

Pour into pan. Bake until toothpick comes out clean, 50 to 55 minutes. Cool 10 minutes, remove from pan. Cool completely before slicing. Store in refrigerator. 1 loaf.
