ZUCCHINI BREAD 
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/3 tsp. baking powder
2 c. sugar
3 eggs
2 c. grated zucchini
1 c. chopped nuts
2 tsp. vanilla
1 c. oil
Chocolate chips (optional)
Peanut butter chips (optional)
Coconut, shredded (optional)

Mix all ingredients together. Bake at 350 degrees, loaves for 1 hour, muffins for 25-30 minutes, and miniature muffins for 10-15 minutes. Freezes well.
