ZUCCHINI BREAD 
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. baking powder
3 beaten eggs
2 c. sugar
3 tsp. vanilla
1 c. oil
3 c. grated zucchini (not peeled)
1 c. chopped nuts

Sift flour, salt, baking soda, cinnamon and baking powder. Beat eggs. Add sugar, vanilla and oil. Mix well. Stir in zucchini. Add dry ingredients; blend. Stir in nuts.

Bake in 2 greased bread pans or muffin pan. Bake 1 hour, 350 degrees; muffins 50 minutes, 350 degrees.
