COCONUT BAR COOKIES | |
3/4 c. (1 1/2 sticks) butter, softened 1/2 c. packed light brown sugar 1 egg 1 1/2 c. all-purpose flour 1 1/2 c. chopped walnuts 1 pkg. (12 oz.) semi-sweet chocolate pieces 3 c. shredded coconut (9 oz.) 1 can (14 oz.) sweetened condensed milk 1. Line 13x9x2 inch pan with aluminum foil; lightly grease. 2. Combine butter, sugar and egg in food processor. Whirl until creamy. Add flour and 1 cup walnuts. Pulse just until combined and still in clumps. Press in even layer with floured fingers into pan. 3. Bake in preheated moderate oven (375 degrees) for 15 minutes or until edges are golden. Cool in pan on rack. 4. Sprinkle on chocolate pieces, coconut and remaining walnuts. Pour on milk. 5. Bake in preheated moderate oven (375 degrees) for 20 minutes or until golden. Cool in pan. Cut into thirty-six 2 x 1 1/2 inch bars. |
