CHOCOLATE, COCONUT, OATMEAL BARS
OR COOKIES
 
1 1/4 c. butter
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
3 c. oats
1 (12 oz.) pkg. chocolate chips
6 oz. coconut

Cream butter and sugars. Add eggs and vanilla. Mix together flour, soda and salt. Blend cream and dry ingredients together. Add coconut, chips and oats. Heat oven to 375 degrees. Cook in 13"x9" pan for 35 to 40 minutes or drop by tablespoons and bake 8 to 10 minutes.

I made the recipe into bars instead of cookies. I bake with gluten free flours (sorghum, coconut, almond, brown rice and millet for this recipe) and unfortunately they were crumbly and quite brown even though I baked them for 28 minutes. I love the taste, however so if I make them again I may try baking at 350°F, cut the oats by 1/2 cup, add an extra egg and maybe substitute 1/4 cup butter for canola oil. Also I will try making the batter into cookies instead of bars. This batch I'm breaking into chunks for an ice-cream topping- Still a win!
