ZUCCHINI BREAD | |
2 c. flour 2 tsp. cinnamon 1/4 tsp. salt 2 eggs 2 tsp. vanilla 1 c. sugar 1 tbsp. baking powder 3 tsp. milk, instant 1/2 c. vegetable oil 1 1/2 c. zucchini, grated (zucchini may be replaced with 2 cups carrots, grated) Heat oven to 350 degrees. Thoroughly combine dry ingredients. Blend liquid together, mix well. Add liquids to dry ingredients. Stir well. Mixture will be stiff. Stir in zucchini, place in bread tins or muffin tins. Bake at 350 degrees for 50 to 60 minutes for bread or 25 to 30 minutes for muffins. Use toothpick to test for being done. |
