COCOA COFFEE BARS 
1 tbsp. instant coffee
1/2 c. butter
1 c. sugar
1 tsp. vanilla
1 egg
2/3 c. flour
1/3 c. unsweetened cocoa
1/2 tsp. baking powder
1 c. nuts, chopped

Preheat oven to 350 degrees. Grease an 8"x8" pan. Melt butter in a 2 quart saucepan over medium heat. Remove from heat, stir in sugar and vanilla until blended; beat in egg. Gradually add flour, instant coffee, cocoa and baking powder. Stir until well blended. Add nuts. Spread batter in pan. Bake 30 minutes. Makes 16 (2") Cocoa Coffee Bars.

These were good. I wish I would have had a stronger flavor of instant coffee. I had a store brand and I would put more coffee in the next time. I could taste a faint coffee flavor (I'm a coffee lover.)
