CRANBERRY, CHERRY OR BLUEBERRY COFFEE CAKE | |
3/4 c.butter 1 1/2 c. sugar 1 tsp. vanilla 4 eggs 3 c. flour 1 1/2 tsp. baking powder 3/4 tsp. baking soda 1/4 tsp. salt 1 c. sour cream In a large bowl, beat butter with sugar and vanilla until fluffy. Add eggs, one at a time, beating after each. In a separate bowl mix flour, baking powder, baking soda and salt. Add this flour mixture in three additions, alternately with sour cream, beating until combined. Turn 1/3 of the batter into a Pam sprayed bundt pan, sprinkle with brown sugar/blueberry mix or cranberry or cherry/sugar, flour, butter mix. Use only half of the fruit/mix. Repeat layering of remaining fruit/mix. End with batter. Bake at 350 degrees for 50 minutes. VARIATIONS: 1. 1 cup blueberries, 1/4 cup packed brown sugar, 1 tablespoon flour and 1/2 teaspoon cinnamon. 2. 1 can whole berry cranberry sauce or cherry pie filling, 6 tablespoons sugar, 4 tablespoons flour mixed with 2 tablespoons butter in a small bowl. |
