NEW ENGLAND BLUEBERRY COFFEE CAKE | |
1 1/2 c. all purpose flour 1/2 c. sugar 1 tsp. cinnamon 1 1/2 c. fresh blueberries 1/2 c. milk 1/4 c. butter, melted 1 tbsp. baking powder 1/2 tsp. salt 1 egg TOPPING: 1/4 c. butter, melted 1 tbsp. flour 3/4 c. brown sugar 1/2 c. chopped walnuts In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt. Gently fold in blueberries. In small bowl, whisk together the egg, milk, and butter. Add flour mixture and stir carefully. Spread into greased 8 x 8 inch baking pan. Combine all topping ingredients and sprinkle over batter. Bake at 425 degrees for 20-25 minutes or until top is golden brown. Serve warm. Yields 12 servings. |
