QUICK SPANISH BEEF - RICE 
1/4 c. Wesson pure vegetable oil
1 med. onion, thinly sliced
1/2 med. green pepper, chopped
1/2 lb. ground beef
1 c. reg. rice, uncooked
2 (8 oz.) cans Hunts tomato sauce
1 3/4 c. hot water
1 tsp. salt
Dash of pepper
1 tsp. prepared mustard (opt.)

Heat Wesson in skillet. Add onion, green pepper, beef and rice. Stir over high heat until lightly browned. Add Hunts tomato sauce and remaining ingredients, mix well. Bring quickly to a boil. Cover tightly and simmer 25 minutes. Makes 4 servings. Meat may be omitted. 1/2 cup grated cheese may be added just before serving.

For packages, pre-cooked rice: Use only 1 1/2 cups water for 1 1/2 cups rice, and simmer uncovered, only 5 minutes.

I have been preparing this dish for my family ever since it was featured on the Hunt's tomato sauce label. It's delicious and appeals to young children as well as adults and is quick and easy to make. When my children were young they ate around the green pepper but by the time they were teens they were fighting over it and I began to add more of it to the dish. One other change I've made is to buy one each yellow, red and green peppers and mix them to add color to the dish.
