QUICK SPANISH BEEF RICE 
2 tbsp. oil
1/2 med. green pepper
1 c. regular rice, uncooked
2 (8 oz.) cans tomato sauce
1 tsp. salt
Dash of pepper
1 med. onion, chopped
1 lb. ground beef
1 3/4 c. hot water
1 tsp. prepared mustard

Heat oil in skillet. Add onion, pepper, beef and rice. Stir over high heat until lightly browned. Add tomato sauce and remaining ingredients. Mix well. Bring quickly to a boil. Cover and simmer 25 minutes. (For packaged pre-cooked rice, use only 1 1/2 cups water for 1 1/2 cups rice and simmer uncovered 5 minutes.)
