BASIC CHILI | |
2 lb. lean ground beef 1 c. chopped onion 2 garlic cloves, crushed 1 tsp. oregano 1 tbsp. ground cumin 1 tsp. salt 2 (15 oz.) cans tomatoes 1 (15 oz.) can tomato sauce 3 tbsp. chili powder 3 tbsp. plain flour 3 tbsp. water 1 can kidney beans (optional) Cayenne pepper, to taste In a 4-5 quart Dutch oven, brown beef. Add onions and garlic. Cook until onions are transparent. Add herbs, salt, tomatoes, tomato sauce, and chili powder. Simmer about 1 hour, stirring occasionally. Blend flour and water to mixture. Stir well and cook 20 minutes. |
