SCANDINAVIAN MEATLOAF 
1 egg
2 tbsp. cream or milk
1 tsp. salt
2 tsp. chopped capers (opt.)
1/4 c. chopped pickled beets
1 tbsp. pickled beet juice
2 green onions, including tops, chopped
1/3 c. soft bread crumbs
1 lb. hamburger

In a medium bowl beat egg lightly. Add remaining ingredients except meat; mix well. Crumble in meat, uncooked; mix well. Pat firmly into a 6" patty. Cook in skillet about 15 minutes on each side.
