SQUASH CROQUETTES 
3 c. cooked squash
2 tbsp. onion, chopped
3 tbsp. butter, melted
2 c. corn bread crumbs
3 eggs, beaten (2 may be enough)
Bread or cracker crumbs (enough to roll croquettes in)

Drain cooked squash and mash. Add corn bread crumbs, onion, butter and eggs. Stir well. Shape this mixture into croquettes. Roll each in crumbs and fry. (Best when fried in deep fat.)
