MARYLAND LADY CRAB CAKES 
1 lb. Maryland crab meat (artificial crab meat may be used as substitute)
1 c. Italian seasoned bread crumbs
1 large egg or 2 small
1/4 c. mayonnaise, approximately
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. Worcestershire sauce
1 tsp. dry mustard
butter, butter or oil for frying

Remove all cartilage from crab meat. In bowl, mix bread crumbs, egg, mayonnaise, and seasonings. Add crab meat; mix gently, but thoroughly. If mixture is too dry, add a little more mayonnaise. Shape into 6 cakes; cook in fry pan, in just enough fat to prevent sticking, until browned, about 5 minutes on each side. Makes 6 crab cakes.

NOTE: Crab cakes may be deep fried at 350 degrees for 2-3 minutes or broiled in oven on both sides, until brown.

NO, artificial crab meat may NEVER be used. Imitation crab meat does not even remotely resemble blue crab back fin meat in taste or texture (even Dungeness crab will yield an entirely different product).
