DEVILED EGGS 
1 dozen eggs
1 tsp. butter substitute, dry
1/4 c. skim milk
5 drops yellow food coloring
3 tbsp. Russian Delight Vegi-dressing
1/2 sm. onion, diced
Paprika
1/2 c. water
1/4 tsp. salt
3/4 c. instant mashed potatoes
1/2 tsp. mustard
1/4 tsp. lemon pepper
1/4 stalk diced celery
1 egg yolk, hard boiled
1/4 c. vinegar

Boil eggs in water to which 1/4 cup vinegar has been added 15 minutes. Cool eggs. Heat 1/2 cup water, butter, salt and milk in small saucepan. Add potatoes and mix well. Add food coloring, mustard, dressing, pepper, celery, onion to potato mixture. Cut all eggs in half. Scoop out yolks and discard all but one yolk. Mash the one yolk and add to potato mixture. Fill egg cavities with potato mixture. Sprinkle paprika over the top of completed eggs. Chill 1 hour. Makes 24.

Variations can be made by substituting different kinds of dressing and/or vegetables. Example: Crisp turkey, bacon, parsley, Sicilian Garlic veg-dressing, green and red peppers, grated nonfat Cheddar cheese.
