BEEF WITH PEANUTS | |
2 tbsp. oil 1/2 tsp. salt 1 lb. ground round steak 1 (10 oz.) pkg. frozen peas, partially thawed 1 tsp. sugar 2 tbsp. sherry 1/3 c. chicken broth 1 tbsp. soy sauce 1 c. bean sprouts 1 tbsp. cornstarch dissolved in 2 tbsp. water 1/2 c. dry roasted peanuts 2-3 c. hot cooked rice Heat oil with salt in wok. Add ground meat and stir fry over high heat until no longer pink. Add peas and stir fry for 30 seconds. Sprinkle with sugar. Add sherry and cook, stirring for 1 minute. Add broth or water and cover. Steam for 2-3 minutes, stirring occasionally. When peas are tender, add soy sauce and bean sprouts. Add dissolved cornstarch and stir until thickened. Stir in peanuts. Serve over hot cooked rice. Serves 4-6. Variation: Use sirloin strip steak or stir fry steak. |
