CHICKEN - APPLE SAUTE 
1 Golden Delicious apple
2 tbsp. oil
1/2 lb. chicken, boned, skinned and sliced
1 med. green pepper, sliced lengthwise
1 med. onion, sliced lengthwise
1 c. diagonally-sliced celery
1 tbsp. cornstarch
2 tbsp. apple juice
1/2 tsp. salt
Dash pepper
2 tsp. soy sauce
1 tbsp. cider vinegar

Core and slice apple. Heat 2 tablespoons oil in non-stick skillet. Saute chicken until cooked; remove from pan. Add green peppers, onion and celery to skillet; saute until crisp-tender. Return chicken to vegetables; add apple and heat thoroughly. Combine remaining ingredients; add to apple mixture and cook until sauce thickens. Makes 3 servings, 338 calories each.
