CHICKEN APPLE SAUTE 
1 tbsp. corn oil or safflower oil
1 lb. chicken breasts, skinned, boned and cut into strips
1 c. celery, diagonally sliced
1 med. green bell pepper, sliced lengthwise
1 med. onion, sliced lengthwise
1 Golden Delicious apple, cored and sliced
1/2 c. apple juice
1 tbsp. white wine vinegar
1 tbsp. cornstarch
1 tsp. soy sauce

In a wok or nonstick skillet, heat oil over medium heat. Add chicken. Saute over medium high heat until cooked through. Remove chicken. Add celery, green pepper, and onion. Stir fry until tender crisp. Add chicken and apple. Stir fry for 1 minute.

Combine apple juice, vinegar, cornstarch and soy sauce in a small bowl. Add to chicken. Cook until thickened, stirring constantly. Makes 4 servings.
