LEMON ITALIAN COOKIES | |
2 cups all-purpose flour, sifted 3 tbsp. baking powder 4 tbsp. sugar 4 heaping tbsp. shortening (Crisco) 1/2 cup milk 1 egg 1 tsp. lemon extract Preheat oven to 375°F. Sift flour. Add baking powder and sugar, and sift again. Cut in shortening and add milk, egg, and lemon extract. Blend thoroughly. Flour hands and pinch out about 1 teaspoon of dough and roll into a ball. Repeat process and place on greased cookie sheets, 2 1/2 inches apart. Bake at 375°F for 10 to 15 minutes. FROSTING: 2 cups confectioners' sugar 1/3 cup shortening (Crisco) heated milk Mix together confectioners' sugar, shortening and enough heated milk to make spreading consistency. Frost cooled cookies.
