LEMON TEA COOKIES 
2 tsp. lemon juice
1/2 c. milk
1 3/4 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 c. butter
3/4 c. sugar
1 egg
Lemon Glaze

Heat oven to 350°F. Stir lemon juice into milk, set aside. Stir together flour, baking powder, baking soda, and 1/4 teaspoon salt. Beat butter and egg, add sugar and beat until fluffy. Add dry ingredients alternately with milk to butter mixture. Drop by teaspoonfuls on ungreased cookie sheet.

Bake 12-14 minutes. Brush on glaze.

LEMON GLAZE:

Stir together 3/4 cup sugar and 1/4 cup lemon juice.

These turned out great and where easy to make. I substituted a lemon balm liquor for the lemon juice because I didn't have lemon juice. Yummy! Light and fluffy.

I decided to give this recipe a whirl since I wanted a lemon cookie. These cookies came out DELICIOUS! Sort of like a fluffy sugar cookie (like the pre-packaged kind at grocery stores with the icing on them). For the glaze. I used powdered/confectioner's sugar since it didn't specify and used enough sugar with the lemon juice to make a thin icing. The icing gets hard when it dries and leaves a somewhat tart flavor from the icing. Took the cookies to some friend's today and got compliments on them. DEFINITELY making them again. Yum!

Made these with almond milk instead of milk because I didn't have any, but they still turned out great! Very light and fluffy with enough lemon coming through. Got compliments from EVERYONE who tried one!

I loved these cookies! They were a hit! I added a little bit of imitation vanilla and light corn syrup to my glaze just a personal thing I guess I really liked it. I made these with almond milk and they still came out splendidly!
