BACON WRAPPED STUFFED JALAPENOS 
1 pound raw Jalapenos
1 package 8 oz. cream cheese
1 bag of shredded jalapeno jack cheese
1 1/2 pound of Bacon
toothpicks (soaked in water for about 30 minutes, to prevent burning)

Cut jalapenos in half, coring and removing seeds. Bring a pot of water to boil, add a little salt, and boil jalapenos for a couple of minutes until soft, but still a little firm. I do this step to reduce a little bit of the heat from the pepper.

Next, put cream cheese and shredded cheese in a bowl and mix well. Then, after straining the jalapeno halves, stuff with cheese mixture, about a tablespoonful then wrap a slice of bacon around the pepper, securing the bacon with a toothpick.

These may be grilled on the BBQ pit or baked at 375°F until cheese has melted and bacon is crisp and brown.

Makes 30 peppers.

I love stuffed Jalapeno peppers. I prefer to use the canned pickled one. Less work, means you will make them more often. But the above recipe sounds great with fresh peppers.

You can use Rotel of your choice and drain it from the can. Then Mix with cream cheese.

Try cooking the bacon in the oven a few minutes before you assemble then when you grill them the bacon gets extra crispy. Yummy!!!!

One thing that should be obvious but isn't is WEAR GLOVES when cleaning out the peppers! I got a major chemical burn from inside of the Jalapeno peppers. I tried everything from oatmeal, sour cream, milk, yogurt, vinegar, olive oil, olive oil and sugar, aloe, water, iced water and NOTHING helped. If you get burned, use powdered sugar and a bit of water and massage it in your skin, let set for a minute and then rinse (don't rinse and scrub just rinse) and then lightly blot dry. Let your hands mostly air dry. I suffered hours and within 5 minutes of using powdered sugar and water, I am perfectly fine!. NOTE THIS please!!

I use turkey bacon to wrap mine because it seems to crisp up better and is already cooked. I also use a pepper jelly to dip them in.
