HOLLAND CHRISTMAS COOKIES 
1 cup (2 sticks) butter
2 cups brown sugar
grated rind of 1 lemon
2 eggs
4 cups all-purpose flour
1 tsp. baking powder
1 tbsp. cinnamon
1 tsp. nutmeg
1/4 tsp. cardamom
1/4 cup blanched, shirred almonds (optional)
2 to 4 tbsp. milk

Cream butter and sugar until fluffy, add lemon rind and eggs. Mix flour, baking powder, cinnamon, nutmeg and cardamom and stir into the butter mixture with the optional almonds.

Add enough milk to make the dough malleable, put it on a hard, stable, and clean surface. Knead the dough until smooth, chill well for about 1 hour in the refrigerator.

Roll out on a floured surface. Cut with cookie cutters or with a knife, place on a greased baking sheet and bake at 350°F for about 15 minutes or until golden brown.

Makes about 40 cookies. Enjoy!
