SWEET POTATO CASSEROLE 
1 (1 lb.) can sweet potatoes
8 tbsp. brown sugar
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 c. raisins (opt.)
2 c. thinly sliced apples
4 tbsp. vegetable oil
1 1/3 c. slivered almonds

Cut sweet potatoes cross wise in 1/2" slices. Combine brown sugar, cinnamon and salt. Grease a 2 quart casserole. Place a layer each of potatoes, apples and raisins. Sprinkle with 1/2 sugar mixture. Place another layer of each and sprinkle with remaining sugar mix. Toss the almonds with the oil and spread over the casserole. Cover and bake for 35 minutes at 375 degrees. Remove cover and bake an additional 10 minutes or until browned. 4 to 6 servings.
