SWEET POTATO AND ORANGE CASSEROLE | |
10 lg. sweet potatoes, boiled and peeled and sliced 1 c. brown sugar 1/2 c. butter 3 oranges, unpeeled and thinly sliced 1 c. orange juice 1/2 c. honey 1/2 c. fresh bread crumbs Arrange half the potatoes in casserole dish. Sprinkle with 1/3 cup of sugar. Dot with 2 tablespoons of butter. Arrange half the orange slices on top. Cover with remaining potatoes. Sprinkle with 1/3 cup sugar, dot with 2 tablespoons honey. Top with remaining orange slices. Blend orange juice and remaining honey. Pour onto casserole. Combine remaining sugar and bread crumbs. Sprinkle on top. Dot with remaining butter. Bake at 350 degrees for 45 minutes with cover on and 15 minutes with cover off. Serves 10-12. |
