ORANGE SWEET POTATO CASSEROLE 
3 lb. sweet potatoes
3/4 tsp. salt
1/3 c. sugar
1/3 c. butter, melted
1/2 c. orange juice
1 tsp. grated orange peel
1/2 tsp. lemon peel, grated

Wash potatoes and put in saucepan with salt; cover with water and boil potatoes. Cook until tender. Cool. Remove skin and peel and mash. Add remaining ingredients and whip until light and fluffy. Turn into buttered casserole dish. Bake in hot 400 degree oven for 1 hour until brown on top. May place marshmallows on top last 6 to 8 minutes until marshmallows are golden in color.
