SHAN'S SWEET POTATO CASSEROLE
A'LA ORANGE
 
4 lbs. sweet potatoes
1 egg
1 tsp. shredded orange peel
1/4 c. orange juice
2 tbsp. butter
1 tsp. salt
1/4 tsp. ground nutmeg

Cook potatoes in salted, boiling water, covered, 30 to 40 minutes until tender. Drain, peel, and quarter. Return to pan. Add eggs, peel, juice, and butter. Mash. Stir in salt and nutmeg. Heat through until hot. Serves 12.
