SWEET POTATO AND ORANGE
CASSEROLE
 
5 lb. sweet potatoes
Juice of 5 oranges
1 c. raisins
Salt
1/2 c. brown sugar
1/8 lb. butter

Boil potatoes. Then peel, mash, and mix thoroughly with orange juice and raisins. Salt to taste. Put a layer of potatoes in the bottom of a well greased dish. Sprinkle with brown sugar and dots of butter. Put in the rest of the potatoes and again sprinkle with sugar and butter. Bake in reflector oven from 1/2 to 1 hour.
