ITALIAN CHICKEN AND RICE 
4 (8 deboned) chicken breasts
1-2 eggs, beaten
Italian bread crumbs
Parmesan cheese
8 oz. mozzarella cheese, grated
Spaghetti sauce

Dip chicken in egg and roll in crumbs. Brown in oil in skillet. Pour a little sauce in greased casserole. Place chicken in casserole and sprinkle with cheeses. Top with remaining sauce. Bake at 350 degrees for 30-45 minutes. Microwave for 20 minutes, turning every 10 minutes. Serve over rice with salad and bread.

Since microwave ovens vary in power, you may need to adjust your cooking time.
