ITALIAN RICE SALAD 
3 c. cooked rice
2 pimentos, cut in strips
1 green pepper, cut in strips
12 green onions (scallions), finely cut OR
2/3 c. chopped red onion OR half and half
1 tsp. dried or 2 tbsp. fresh basil
18 lg. stuffed olives, sliced
1 1/2 c. chicken or turkey breast in julienne strips
18 anchovy fillets, coarsely cut (optional)
Garlic flavored French dressing
Tomato wedges
Hard cooked eggs

Combine the first 8 ingredients. Toss with dressing. Garnish with tomato wedges and quartered eggs. Makes 10-12 servings.
